The Commis 2 will be responsible for preparing food and handling special requests under the direction of the Head Chef. As a part of the pastry/kitchen team, they are expected to meet both short-term and medium-term operational goals by maintaining high standards of quality at all times.

KEY RESPONSIBILITIES

  • Ensures compliance with food safety, temperature records, HACCP, ISO 22000, and inventory management standards at all times.
  • Maintains proper food handling, preparation, and storage standards to reduce waste and uphold compliance.
  • Provides daily updates to the Head Chef on relevant operational and personnel matters.
  • Prepares items for restaurants, banquets, and special events on time, ensuring they meet both quality and quantity standards.
  • Completes daily requisitions for restaurant supplies as assigned.
  • Keeps all designated areas clean, including refrigerators and freezers.
  • Carries out duties typical for the position and any additional tasks as assigned.
  • Controls costs by reducing spoilage and waste, ensuring proper storage, and practicing strict portion control.
  • Prepares lunch and dinner buffets, special event items, banquets, and restaurant supplies as assigned.
  • Ensures adherence to cost control policies and procedures.
  • Produces dishes according to specified recipes and standards.
  • Participates in relevant internal training sessions.
  • Reports any equipment in need of repair or maintenance.
  • Checks daily menus, function sheets, and promotions.
  • Ensures freshness and quality of products used and that they are stored correctly.
  • Manages section operations smoothly during Line Manager absences.
  • Has a significant impact on pastry or kitchen operations, with moderate influence on the restaurant level.

SKILLS

  • High school diploma, secondary diploma, or vocational training.
  • Basic understanding of culinary preparation, cooking methods, and product knowledge.
  • Prior experience with HACCP, ISO 22000, and food safety standards.
  • 1-2 years of experience in a kitchen environment is preferred.
  • Proficient in spoken and written English; Arabic is a plus.
  • Strong time management and organizational skills.
  • Ability to maintain good relationships with staff and coworkers (teamwork).
