The Commis 1 will be responsible for preparing food and handling special requests as directed by the Head Chef. As part of the Pastry/Kitchen team, the role will involve meeting both short- and medium-term operational goals by ensuring consistent adherence to high-quality standards.
KEY RESPONSIBILITIES
- Ensure compliance with food safety standards, temperature records, HACCP, ISO 22000, and inventory management practices at all times.
- Maintain proper food preparation, handling, and storage procedures to minimize wastage and ensure overall compliance.
- Provide daily updates to the Head Chef regarding operational and personal matters.
- Ensure timely preparation of items for restaurants, banquets, and special events, meeting quality and quantity standards.
- Prepare daily restaurant requisitions as assigned.
- Maintain cleanliness in all assigned areas, including refrigerators and freezers.
- Perform duties related to the position and any additional tasks as assigned.
- Control costs by minimizing spoilage, waste, and ensuring proper storage, along with strict portion control.
- Prepare assigned lunch and dinner buffets, special events, banquets, and restaurant supplies.
- Follow cost control policies and procedures.
- Produce dishes according to recipes and specifications.
- Attend relevant internal training sessions.
- Report any equipment in need of repair or maintenance in the section.
- Review function sheets, daily menus, and promotions.
- Ensure the freshness and proper storage of ingredients used in the section.
- Ensure the smooth operation of the section during the absence of the Line Manager.
SKILLS
- High School diploma, secondary education, or vocational training.
- Basic understanding of culinary preparation, cooking methods, and product knowledge.
- Previous exposure to HACCP, ISO 22000, and food safety standards.
- 2-3 years of experience working in a kitchen environment is desirable.
- Fluent in both spoken and written English; Arabic is a plus.
- Strong time management and organizational skills.
- Ability to maintain good relationships with staff and coworkers (Teamwork).
